Citrus Calamari Salad Recipe

INGREDIENTS

400g fresh calamari rings
2T EVOO
100g butter lettuce
1 orange, 1 mandarin, 1 grapefruit, all segmented
1 head of fennel, shaved
1 cucumber, seeded & sliced
1/4C soft herbs - dill and parsley work well

Dressing

1/3C EVOO
1/4C fresh orange juice
1tsp dijon mustard

 

METHOD

  1. Toss the calamari in a bowl with the EVOO Heat a large frying pan on high heat (you can also use a BBQ).
  2. Cook calamari for 1-2 minutes each side.
  3. On your serving platter, arrange lettuce, fennel, cucumber and segmented citrus. Top with warm calamari.
  4. To make the dressing, combine all ingredients in a jar and shake to combine. Pour over salad and toss well.
  5. Top with herbs & enjoy!
