Tomato, Watermelon and Fig Salad

This interesting salad is great for late summer, early autumn, when fresh figs are at their best!


  • 1/2 Medium-sized watermelon, cubed
  • 400g mixed baby tomatoes, halved
  • 4 ripe fresh figs, quartered
  • 60g lettuce mix
  • 1/2 red onion, finely diced
  • 150g bocconcini, drained
  • 2T extra virgin olive oil
  • 1T white wine vinegar
  • 4T slivered almonds, toasted
  • 1/2C basil leaves, washed


  1. Combine watermelon, tomatoes, figs, lettuce, onion and bocconcini in a large bowl.
  2. Place oil, vinegar, salt and pepper in a small jar and shake to combine. Pour over salad and toss together gently.
  3. Garnish with basil leaves and slivered almonds


  • Bocconcini can be substituted for feta or vegan feta.
  • For an extra-festive twist, add pomegranate arils to your garnishes!
