Healthy Grain Salad Recipe


2 bunches mixed soft herbs (dill, coriander and parsley work well)
1/2 red onion, finely chopped
1C quinoa
1/2C puy lentils
1/2C mixed, toasted seeds and nuts (pumpkin or sunflower seeds, slivered almonds, chopped pistachios and pine nuts are all wonderful)
1/2C currants

Juice of 1 lemon
3 Tbsp extra virgin olive oil
Salt & pepper to taste

1C thick greek yoghurt
3 Tbsp tahini
1 Tbsp honey
1/2 Tsp ground cumin
Pomegranate arils, optional


  1. Cook quinoa and lentils, separately in boiling water until tender. Drain and allow to cool.
  2. Mix the yoghurt, tahini, cumin and honey in a bowl until thoroughly combined. Set aside.
  3. In a medium bowl, place chopped herbs, onion, quinoa, lentils, toasted nuts and seeds, currants, lemon juice and EVOO. Mix well. Place onto a serving dish.
  4. Mix yoghurt, tahini, honey and cumin together and place on top of the salad. Garnish with pomegranate arils, if desired.
