Banana Protein Pancakes!

Serves 3 (3 pancakes per serve)

Pack a punch of protein into your breakfast with our delicious Banana Protein Pancake recipe. Each serve contains approximately 12g of protein. Serve with greek yoghurt to really up the stakes!

INGREDIENTS

2 very ripe bananas (the more brown spots, the better!)

2 eggs

1/2C milk of your choice

1 tsp vanilla extract

1 1/2C rolled oats

2 tsp baking powder

1/2 tsp cinnamon

Olive Oil for cooking

PROCESS

Add all ingredients (except olive oil) into a blender and process on high speed for roughly one minute or until smooth. Let the batter sit while you're heating up a pan on medium heat.

Coat the pan with a little olive oil and pour 1/3 cup of batter into the pan. Cook on the first side until you see lots of bubbles forming and popping, roughly 2-3 minutes. Flip and cook until golden brown.

Top with a good quality greek yoghurt, fruit and honey or syrup, if desired.
