Raw Caramel Slice Recipe

Try our delicious, nutty, caramel slice recipe. Perfect to share for morning tea or with a hot tea after dinner.

Ingredients

BASE
0.5C pitted medjool dates
1.5C roasted almonds (you cal also use cashews)
1.5T melted coconut oil
1 tsp vanilla extract
Small pinch of sea salt to taste

DATE CARAMEL LAYER
2C pitted medjool dates
0.5C tahini
0.5C maple syrup
0.5C natural peanut butter
0.25C melted coconut oil

TOPPING
0.5C cacao powder
0.5C melted coconut oil
2T maple syrup

 

Instructions

  1. Using a food processor, blitz the almonds until they form a crumb, add the dates, oil, vanilla and salt and mix until completely combined
  2. Line a rectangular baking dish (the smaller the dish, the thicker the slice will be) with baking paper and press the crumb into the base. Tip: If the mixture is sticking to your hands, wet them a little with water.
  3. Set the base in the fridge for 30 minutes
  4. For the caramel, place all ingredients into the food processor and blitz until the mixture resembles a thick caramel.
  5. Spoon the caramel over the base and set in the fridge for 4 hours.
  6. For the chocolate topping, place all ingredients into a bowl and mix to combine. Pour over slice and place back in fridge for at least 1 hour to completely set.
  7. To serve, slice into 15-20 small squares.

    Slice can be stored in an airtight container for  up to a week in the fridge or 3 months in the freezer. Enjoy!
